How to Make Zucchini Brownies

Prepare: Preheat your oven to 350°F (175°C). Butter a 9×13 inch metal pan and line it with parchment paper for easy removal.

Melt Chocolate: In a medium saucepan, melt 2 cups of chocolate chips and butter over medium heat, whisking constantly. Be careful not to let it boil. Once it’s smooth, take it off the heat and let it cool for about 15 minutes.

Dry Ingredients: In a small mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

Wet Ingredients: In a large bowl, whisk together the eggs, sugar, oil, and vanilla until well blended. Then, add the cooled chocolate mixture and whisk until combined.

Mix: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Fold: Gently fold in the grated zucchini and walnuts until everything is well mixed. Pour the batter into the prepared baking pan and sprinkle the remaining chocolate chips on top.

Ingredients
  

  • 1 cup almond butter
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/2 cup brown sugar or coconut sugar
  • 1 medium zucchini grated
  • 1 tbsp vanilla extract
  • 1/3 cup + 2 tablespoons cocoa powder
  • 1 tbsp baking powder
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.
  • In a mixing bowl, whisk together the almond butter, maple syrup, brown sugar, eggs, and vanilla extract. Add in the cocoa powder and baking powder. Fold through the zucchini and chocolate chips.
  • Transfer your brownie batter to the lined pan and bake for 25-27 minutes, or until a toothpick comes out just clean from the center.
  • Allow brownies to cool in the pan completely before slicing and serving.

TO STORE: Leftover brownies can be stored in the refrigerator, covered, for up to two weeks.
